IngredientsServes 4400 gms Cottage cheese (paneer) (2 inch pieces) 2 medium sized Tomatoes (halved and seeded) 2 medium sized Green capsicums (halved and seeded ) 2 medium sized Onions (thickly sliced) 3 tbsps Oil 2 tsp Cumin seeds
MethodCut tomatoes and capsicums into two inch long slices with one-fourth inch width. Separate the different layers of onions. Heat oil in a kadai. Add cumin seeds. When they change colour add red chillies. Add ginger julienne, green chillies and onions. Sauté for half a minute. Add red chilli powder and turmeric powder. Stir well and add capsicum. Cook for two to three minutes. Add paneer fingers and toss. Add salt and vinegar and cook for two to three minutes. Stir in tomato pieces and garam masala powder. Serve hot garnished with chopped coriander leaves.

Pakistani ( SeaFood )( Tandoori fish )Ingredients Fish 800 gms. Ginger 1 cm. piece Cumin seeds 1 tsp. Chili powder ½ tsp. Amchoor 1 tsp. Turmeric powder ½ tsp. Ghee 1 tbsp. Garlic 1 tbsp. Salt to taste Dry mint leaves 1 tsp. Lime juice 1 tsp. A little curd
Method 1. Grind together garlic, ginger, cumin seeds to a smooth paste. Add amchoor, chili powder, salt and Curd/Yogurt. 2. Clean and remove the skin of the fish and cut the fish crosswise into desired size pieces. Sprinkle with lime juice and set aside for 10 minutes. 3. Marinate the fish with the ground paste for 3 hours. 4. Remove the excess marinade, brush the wire mesh with oil and place the fish on it in the preheated tandoor/grill.Cook for 3 to 4 minutes. 5. Turn the fish over and smear with Ghee. Continue cooking for another 3 to 4 minutes until done. Brush the ungreased side with ghee and return to tandoor /grill for another minute.

Beef burger
Ingredients
1 egg
1/2 cup mayonnaise
2 potatoes, boiled
200 gms meat, minced
Cucumber slices
Onion rings
Oil for frying
Salad leaves
Salt and pepper to taste
Method
Boil the meat with salt and pepper; mix mashed potatoes and egg in it. Make kebabs and fry them from both sides until well done. Cut the bun in half and spread mayonnaise, place kebab, onion rings, a cucumber slice and salad leaf on the bun, cover it with the other half. Serve with ketchup.

Cooking time: Less than 30 minutes
2 small baguettes
INGREDIENTS
250g salted butter, softened
2 garlic cloves, crushed
2 tablespoons chives, chopped
2 tablespoons parsley, chopped
freshly ground black pepper

6 anchovies, chopped finely
1/3 cup finely grated parmesan
freshly ground black pepper
2 half baguettes
METHOD
Pre-heat oven to 180°C/160°C fan-forced.
Beat butter in a medium bowl with a hand blender or wooden spoon until creamy. Mix in garlic and herbs and season liberally with salt and pepper.
Alternatively, beat butter until creamy and beat in the anchovies, cheese and black pepper to taste. Use as garlic butter.
Keeping bread slices attached at the base, slice baguette at 1.5cm intervals. Spread butter mixture in between slices. Wrap bread in foil and bake in oven for 15 minutes. Bread can be frozen. Cook at 180°C/160°C fan-forced, 30 minutes from frozen.

Warm Indian Potato Salad

1/2 cup vegetable oil or ghee
1 tbsp. cumin seeds
1 tsp. turmeric
1/2 tsp. cayenne
1 tbsp. garam masala
2 tbsp. ground coriander
2 tbsp. finely chopped ginger
1 tbsp. salt
1/2 cup lemon juice
1 cup water
3 lbs. scrubbed and cubed potatoes
1-1/2 cups peas
1 cup finely chopped cilantro
Heat the oil in a large, wide-bottomed pot with a lid. Over medium heat, fry the cumin seeds until they just begin to give off an aroma, then sprinkle in the turmeric, cayenne, garam masala, ground coriander and ginger. Stir until the spices and oil are well blended. Add the salt, lemon juice and water, then the potatoes. Stir briefly, lower the heat, cover the pot and let cook for 20 minutes, or until the potatoes are just cooked. Add more water, a 1/4 cup at a time, if necessary.
Add the peas and cilantro to the pot. (If the peas are frozen, thaw them in warm water first.) Stir well, replace the lid, and let cook for another 10 minutes Remove the lid just before serving to allow any excess liquid to evaporate. Serve warm or at room temperature.

Ingredients instructions
Puri
Makes about 20
2 cups flour
2tsp oil
Oil for deep frying
Aloo ki Bhujia
1 medium size potato
Salt acc. to taste
1/2 tsp chili powder
less than 1/4 tsp of haldi powder
1/2 tsp kalonji seeds
Cholay
1/2 cup presoaked whole channa
salt acc. to taste
1/2 tsp zeera powder
1/2 tsp crushed Whole dried red chilies
1/4 tsp haldi powder
Halva
2tbs Sujji (semolina)
2tbs oil
4 tbs sugar
1/2 cup water
seeds of 3 small illaichi
yellow food color(optional)
Method.....
Puri
Make the dough with flour and
2 tsp oil and water as needed.
Make into small puris (pancake like)
as flat as you can and deep fry in hot oil.
Aaloo Ki Bhujya
Cut the potatoes into small cubes.
Add spices and 1 cup of water and leave on low heat.
When soft, mash lightly.
Cholay
Boil the channa with salt until soft.
In a pot heat 1tbs of oil.
Add spices and softened channa and 1/4 cup of water.
Mix and mash slightly.
Cook till bubbles appear then remove from heat.
Halva
Put the sujji and oil in a pot along with
illaichi seeds and fry until slightly brown
on very low heat.
Meanwhile combine sugar and water to
make a syrup. Add this to the sujji
taking care not to burn yourself and
cook on low heat to desired consistency.
If you want to color the halwa add the
color to the syrup before pouring it
into the sujji.
