Basboosa....traditional Middle Eastern dessert

Ingredients

1 1/2 cups semolina flour

1/2 cup white sugar

1 cup plain yogurt

1/2 cup vegetable oil

3 tablespoons flaked coconut

1 tablespoon baking powder

6 whole almonds, split in half

1 1/2 cups water

1 3/4 cups white sugar

2 tablespoons rose water

Directions

1. In a medium bowl, mix together the semolina flour, 1/2 cup of sugar, yogurt, oil, coconut, and baking powder. Set aside for 30 minutes.
2. In a small saucepan over medium-high heat, stir together the water, 1 3/4 cups sugar, and rosewater. Bring to a boil, and boil for 3 or 4 minutes. Remove from heat, and set aside to cool to room temperature.
3. Preheat the oven to 350 degrees F (175 degrees C). Spread the semolina batter into the bottom of a 9x13 inch baking pan. Slice into squares or diamonds, and place on almond half onto each piece.
4. Bake for 20 minutes in the preheated oven, or until light brown. Switch the oven setting to broil, and broil until the top is golden, 2 to 3 minutes. Remove from the oven, and pour the syrup over the squares. Serve warm.

Banana Cake


Ingredients: Oven: Preheat to 150°C
455 g bananas
455 g butter
4 tablespoons condensed milk
455 g castor sugar
½ teaspoon salt
1 teaspoon banana essence
1 teaspoon vanilla essence
9 eggs
340 g self-raising flour, sifted



Method:

Mash bananas with a fork. Cream butter, condensed milk and half of the sugar for 5 minutes. Add salt, banana essence and vanilla essence. In a clean mixing bowl, whisk eggs with the rest of the sugar until thick and creamy. Fold in one cup of the egg mixture to the creamed butter until well mixed. Add the rest of the egg mixture, mashed bananas and lastly the flour, stirring as lightly as possible. Pour into a greased cake tin. Bake in oven at 150°C for 1-1¼ hours.

Kulfi.
Kulfi is a frozen dessert made with milk. Traditionally, milk is boiled till its reduced to one third, sweetened and flavored with cardamom and chopped nuts. It is then poured into earthen pots or kulfi moulds and freeze till solid. Here, to accelerate the process, we used evaporated milk and condensed milk.
Makes: around 2 Servings of Kulfi.

Ingredients:

Evaporated Milk 1/2 Cup
Sweetened Condensed Milk 1/3 Cup / 80 ml
Cardamom Powder 1
Kulfi Moulds 2
Pistachios 2 Tbsps
Silver Warq 1

Method of preparation:

Finely chop the pistachios and keep aside.
Bruise the cardamom and grind the seeds into fine powder.
Bring to boil evaporated milk in a sauce pot, add cardamom powder.
Boil for couple of minutes to let the milk absorb all the cardamom flavor.
Cool the milk to room temperature, stir in condensed milk, half the chopped pistachios.
Pour the milk into kulfi moulds and seal with lid.
Each kulfi mould can hold upto one third cup of the flavored milk.
Alternatively, use any small bowls or glasses to fill up and cover with aluminium wrap.
Freeze the kulfi moulds in freezer for good 6 hours.
Run the moulds under hot water to ease the removal of kulfi.
Remove the kulfi onto a plate, garnish with remaining pistachios and silver warq.
Serve kulfi immediately.
Notes: Make sure to freeze the kulfi pots well.
Suggestions: You can place the kulfi moulds in ice cubes sprinkled with salt.
Variations: Alternatively, boil full fat milk till its reduced to one third instead of using evaporated milk and condensed milk. In which case, use sugar to sweeten the milk. Also fold in a tbsp or so of whipping cream if desired

Peach Smoothie

Ingredients:

6 Peaches
4 cups of ice
honey

Directions

Peel your peaches, chop them in half, place them in a blender with ice, and blend. To serve, pour the glass half way with the smoothie, add a dash of honey, pour the glass to the top, and top it with one more dash of honey.

Ingredients
Nedo
Cadamom seeds(Alliachi dana)
Oil
Baking Powder
All purpose flour(maidaClick to find more about maida)
Very cold water
Coconut shereded (Khopra)
Sugar+water(for sheera)
1 cup
56 cardamomClick to find more about cardamom's seeds
5 table spoon
1 pinch(aik chutki)
2,1/2 table spoon
as needed
1/2 cup
1 cup sugar+1,1/2 cup water

Preparation
1Mix oil in nedo milk well
2now add allichi seeds, baking powder and flour and mix them very well.
3now add water which must be cold and try to make a dough, enough hard to make balls.
4In the mean time mix sugar in water and put it on low heat. Don't make fully prepared sheera at this time.
5Now fry baals in a pan on low heat very slowly. Other wise they will become hard.
6After frying put them togather into the sheera and cook until they absorb the sheera well.
7Now if you like roll them into the khopra and decorate them with dry fruit.
This is really easy and tasty recepie.

BADAM KA HALWA


Ingredients:

2 cups Badam
2 1/2 cups Sugar
2 drops Kesar Colour
1 cup Ghee
1 cup Milk

How to make badam halwa:

Leave the almonds in hot water for 1 hour.
Remove the outer skin and grind to a paste with the milk.
Make sugar syrup and boil till it reaches a one string consistency.
Add the badam paste and cook till it thickens.
Add the kesar colour.
Add ghee little by little stirring continuously on low heat.when become thick remove it from heat and serve it
